Quick and Easy Oatcakes

For hundreds of years oatmeal was a staple in the highlander’s diet. It was eaten as gruel (oatmeal), mixed into a sausage, or cooked into oatcakes. I’ve made these with my children. They’re simple, and make a healthy alternative to sugary snacks.

Here’s a quick recipe. You can use raw sugar, brown sugar, or honey. Play around with the amount and type of sugar until you find the right combination for your family.

file00014203984612 cups flour (we use wheat)

2 cups rolled oats

1 tsp salt

¼ cup raw sugar

½ tsp baking soda

Water until you reach a consistency that can be rolled

Cut into circles with a cookie cutter or a glass. Or you can roll it onto a cookie sheet and cut into squares.

Bake at 350 on a greased cookie sheet for 15 minutes.

Have fun and be creative! Some of my followers have told me that they add almonds, cinnamon, raisins…file7441346540519
